thanks for your answers!maple syrup is made by " boiling down " the sap of the Maple tree also known as "sugar maple"....it the springtime the sap flows through the tree, from the roots to the top, the sap is gathered a drop at a time by placing taps on the trees . it takes approximately 50 gallons of sap to boil down to 1 gallon of syrup. It can be boiled down even farther to the "maple candy " stage, its similar to brown sugar...very tasty ! The age of the process I can only guess, I think it goes back to the Indians
