Dairy is (usually) vegetarian- it is not, however, vegan.
Vegans and vegetarians "can" eat whatever they so-choose-'
by definition they CHOOSE to not consume animal products, and animal flesh, respectively.
There are many brands and flavors of vegan ice cream, and vegan milkshake recipes.
I've personally never had tofu.

seeds
legumes
A potato contains the same amount of protein as lamb.

Vegetarians may still eat eggs and dairy, but no meat of any kind (including no chicken and no fish). So they can have ice cream.
Vegan do not eat any animal by products (milk, dairy, honey, etc.) And some vegans go as far not to use products made with animals, or tested on animals, and do not support circuses, zoos, etc. Vegans can eat rice or soy ice creams.
There are so many other foods besides meat that have protein - basically there are beans, nuts, seeds, lentils, potatoes, oatmeal, quinoa, whole grains, spinach, veggie burgers and veggie dogs, algae, vegetables, fruits, grains, etc.
Vegetarian - Does not eat meat or flesh
Vegan - Does not eat meat, flesh or any by-products of animals.
Yes this includes ALL dairy, eggs etc.
Protein sources: vegetables, beans, legumes etc.
You can eat whatever you want, there are no vegan police watching you.
But if you do make the decision to become vegan its usually for strong moral reasons (sometimes health reasons) - so its really up to you what you do.
Personally, I can't justify eating dairy just because I have a craving while knowing that animals are being harmed to satisfy my weakness. But thats why I became vegan in the first place.

Vegan- eat fruit and vegetables! No eggs, milk, chicken, red meat, fish!
Vegetarian- eats fruit vegetables and can eat anything except red meat. So they can eat fish, milk, eggs, and chicken!
It seems like you would be just a vegetarian.
Beans is a good source of protein. Also protein supplements work too!

Vegans do not eat or use anything that comes from an animal. You can get protein from certian types of beans. No eggs, milk, leather. It's a pretty difficult life change to make. You can get dairy free ice cream, but personally I think it's gross lol! Vegetarians just don't eat meat.
A legitimate vegan is a person that only eats/uses food and products that could have been made the exact same way even if no other animals on earth existed.
Any other "class" doesn't carry a definite definition.
