But I think a cous cous salad would be nice - cook cous cous as usual with a little salt to taste, chop up fresh tomato and avocado and mix with cous cous. Yummy and quick and simple.You don't really need one if your making the peppers with meat and rice. It is a complete meal, but my Mom always served mashed potatoes. If your looking to save calories or make them healthier, just mash them up with some chicken broth and margarine. My Mom used Chicken Fat, which I loved but would not recommend. You could serve a salad instead of the potatoes. Don't forget to serve some crusty rolls or bread to sop up the sauce.
You have your starch, meat and veggie all in one! Maybe you could have another vegetable? I would probably serve some garlic bread or rolls with it too. Of course - a salad is always a nice option too! Thanks for reminding me of stuffed peppers....I think I'll be making them soon!
