-I need half a cup of white wine for my chicken recipe and I have none. I have pineapple juice would that be alright to use instead? And is there anything else you can think off that I can use has a wine substituteI would just add chicken or vegetable broth Not knowing what the other ingredients are in the recipe, I don't if the pineapple juice would work.
Imagine your recipe finished and what it woud taste like with a slightly sweet pineapple flavoring. If it seems good to you, go ahead and use it. That is how new recipes are invented.
Pineapple juice would seriously change the flavors of the recipe. Also, the acids in the juice may have a reaction to the rest of the ingredients you don't want. If I were you, just substitute vegetable or chicken stock, and if you dont have that, water. But hey...you never know... the pineapple juice could do wonders for it too, if you're willing to risk the turnout of the whole dish!
Wine gives a flavour that not much else can give. You can try some vermouth (Martini) (about half the specified amount) as this is a fortified wine, but make sure you cook off the alcohol tho.
