-Which should I make, bearing in mind that the one lowest in calories is best? (for my dad - parents' wedding anniversary)
Lemon cake looks better 'cos of olive oil but not sure!
Lemon cake, serves 6 - 8:
300g caster sugar
3 eggs
300g plain white flour sifted with 1tbsp baking powder
Grated zest and juice of 1 orange
Grated zest of 1 unwaxed lemon
120ml extra-virgin olive oil
100ml milk
OR
Peach and almond muffins, makes 6:
3 large eggs
100g golden caster sugar , plus a little extra for sprinkling
few drops of almond extract
25g butter, melted
100g self-raising flour
25g ground almonds
2 small peaches
2 tsp apricot jamThe lemon cake, if it serves 6: 581.9 calories, 22.4 grams fat per slice.
If it serves 8: 436.4 calories, 16.8 grams fat per slice
The muffins: 230.5 calories, 8.5 grams fat per muffin
To make either/both healthier, try replacing one of the eggs with unsweetened applesauce or just using the egg whites; unsweetened applesauce can also replace 1/2 the butter; the sugar can usually be reduced by at least 1/4 cup without a noticeable difference; and use a lower-fat milk. Also, of course, consider smaller portions -either slicing the cake smaller or putting less batter into each muffin tin.Use powdered or skim milk instead of whole milk and your lemon cake will have many less calories. Also, you can really cut smaller serving pieces than 6-8. The second recipe of peach and almond muffins includes butter, fruit and apricot jam. This really adds unnecessary fats and more sugars. Olive oil is a healthy fat. Happy anniversary to your parents. They obviously raised a conscious child.
I would go with the lemon cake. When guests come, do they really want some healthy meal? And what if some people are allergic to nuts? Maybe you should put out both.
I would go with the second one, just due to the fact that refined sugar is one of the worst things for you.
I would say the Peach and almond muffins sound healthier but the lemon cake sounds tastier- Sugar content
